It would be a huge disservice if I didn't post one of my personal favorites - sesame coconut broccoli! This recipe is a nod to the classic sesame soy broccoli, with coconut aminos replacing soy sauce. Once you make this recipe, you will never look at broccoli the same! So go ahead and purchase a head of broccoli or two - you'll want to make this recipe again and again!
Ingredients:
1 head of broccoli
1 1/3 tablespoons of coconut aminos
1 tablespoon of sesame oil
Scant 1/4 teaspoon of garlic powder
1 teaspoon of Everything Bagel seasoning
Directions:
Soak the broccoli in salt water for about 10-15 minutes to draw out bugs, dirt, debris, and pesticide. Avoid soaking too long to prevent nutrient loss. Rinse well with cold water and set aside in a large colander. Line a baking dish with a piece of parchment paper.
In the meantime, mix all of the ingredients together in a small bowl with a fork or whisk. You can use minced garlic if you have that on hand, instead of garlic powder. Simply replace the garlic powder with 1 garlic clove minced. The flavor will be less potent but still add plenty of flavor to the final product.
Add the broccoli to the baking dish. Pour the sauce you made over the broccoli and mix well. Bake the broccoli at 400F for 20 minutes. Feel free to play around with the temperature and time to find your preferred texture. But remember that baking at higher temperature requires baking for less time.
And here is the final product. I soaked the veggies a tad bit too long so the broccoli's texture wasn't as crispy as I liked but the sauce was still on point. Sweet and savory!
