I went back and forth on what recipe I wanted to share as January turned out to be a surprisingly busy month for me! I had just reached two months for a school nurse position and had started teaching for an enrichment program. Adulting does not seem to be getting easier by the day, only the opposite.
I wanted to make some time for myself and honor my commitment of sharing at least two Asian or Asian-inspired recipes for my blog. This recipe will look pretty similar to another veggie-based recipe I recently shared because the sauce is essentially the same but with different ratios and uses a new but very common veggie found in Cantonese cuisine - bok choy!
Ingredients:
1 bunch of bok choy
1 1/3 tablespoons of coconut aminos
3/4 tablespoon of sesame oil
1 piece of garlic
Few sprinkles of Everything Bagel seasoning
Directions:
Soak the bok choy in salt water for about 10-15 minutes to draw out bugs, dirt, debris, and pesticide. Aggregate the bok choy when it's time to wash and scrub between the branches and leaves. Rinse well with cold water and set aside in a large colander. Line a baking dish with a piece of parchment paper.
Next, chop the garlic and add to a small bowl. Add all of the other ingredients and whisk. Then pour this sauce over the bok choy. A huge difference between this recipe and the recipe with the broccoli is that you'll want to use a pastry brush to brush the sauce on the veggies. Feel free to flip the veggies over to ensure you reach each and every nook and cranny.
